【Event Report】 Symposium "The Science of Fermentation in Japan" / March 23, 2026
On Monday, March 23, 2026, the symposium "The Science of Fermentation in Japan" was held at the Regional GX Innovation Co-Creation Center of Nagaoka University of Technology (NUT) andHakkai Brewery Co.The event took place across these two venues.
This symposium was designed as a hands-on program to bridge the local fermentation industry with the university's research expertise. The morning session featured a site visit to the "Koji Dojo" at Hakkai Brewery’sUonuma no Sato, followed by an afternoon program at NUT, consisting of a technical "Koji Dojo" workshop and panel discussion by experts from the fields of finance, policy, business, and education. Participants engaged in a lively discussion on how to transform traditional fermentation culture into new industrial value by unraveling its essence from a scientific perspective .
The event attracted more than 70 attendees from both within and outside the university. During the Q&A session, the floor was filled with enthusiastic inquiries regarding the potential of a Japanese-style bioeconomy and future industrial collaborations, maintaining a high level of energy until the very end.
Through this project, we will continue to drive research and development centered on regional resources, nurture the next generation of talent, and promote international industry-academia-government collaboration.
